Description
A culinary icon which is synonymous with Malta, known as qassatat tal-irkotta, these bites are individually made by hand and keep to the same recipe which Elia has used for generations. Consisting of a shortcrust dome shaped outer pastry which is then filled with ricotta cheese, eggs and salt which are finished off baked until golden brown.
